Garlic Prawn Skewers
2 Tablespoons Olive Oil + 1 extra for cooking
2 Garlic Cloves, finely chopped
Lime & Coriander Dressing
A small handful of Coriander
A small handful of Parsley
2 Garlic Cloves, chopped
Zest and juice of 1 Lime
1/2 Tablespoon Manuka Honey
¼ Cup Extra Virgin Olive Oil
Place the garlic and 2 Tbsp of olive oil in a bowl, add in the prawns and mix together. Cover and leave to marinate in the refrigerator for 2 hours.
Place the coriander, parsley, garlic, lime juice and zest, honey and extra virgin olive oil into a blender, and blend until well combined. Set aside while you cook the prawns.
Thread the marinated prawns onto the skewers and place to one side. Heat the remaining olive oil in a heavy based pan over a medium heat, place the prawn skewers into the pan and cook for approximately 1-2 minutes on each side, or until golden.
Serve with salad leaves, lime wedges and the lime and coriander dressing.
