Sometimes naked is best

Traditionally eggs baked in a pan with tomatoes and veges, this breakfast favorite is usually served in burritos, making it high in unnecessary refined carbs. Our “naked” version switches things up with an egg “burrito” as a healthy, protein packed wrapping for your veges. A dash of chilli in the morning is also a great kick start for your metabolism.


2 eggs

1 capsicum

1⁄4 red onion

1⁄2 avocado

1 large tomato

Fresh chilli (optional)

Salsa to taste

Coriander to taste


Roughly chop all vegetables and mix together in a bowl. Whisk eggs and fry omelet mix in an oiled pan. This is your tortilla. Wrap it around the veges, add salsa and coriander and enjoy.
