Almond Satay Rolls: the only rolls you really want

Finding new and nutritional ways to replace the classic carb will help to protect your hormones and manage your weight. Try these chicken lettuce rolls. They’ll be the only rolls you really want around your tummy.

Summer Rolls with a Satay Almond Dressing

1 Chicken Breast

1 Tablespoon Olive Oil

1/2 a Savoy Cabbage, or 6 whole leaves

1 Red Capsicum, cut into thin strips

2 Carrots, julienned

½ a Cucumber, cut into thin strips

A small handful of Coriander leaves

Satay Almond Dressing

¼ Cup Almond Butter

¼ Cup Brown Rice Vinegar

2 Tablespoon Olive Oil

1 Tablespoon Sesame Oil

3 Tablespoon Tamari

½ Red Chilli, deseeded and finely chopped

Pinch of Sea Salt

Pre-heat oven to 180c, place chicken breast on an oven proof tray and drizzle with olive oil and sea salt.  Roast for approximately 25 minutes.  Remove from the oven and once the chicken has cooled cut into thin strips.

Place all the dressing ingredients into a blender, blend well to combine and then pour into a small bowl to serve.

Remove the leaves from the cabbage and then lightly steam to soften so that they are easier to roll.  Cut each whole leaf in half by removing the coarse stem from the middle. 

Lie the leaves out flat and fill with the sliced chicken, carrot, capsicum and cucumber.  Scatter with a few coriander leaves and roll together. 

Serve with extra coriander leaves, and the satay almond dressing.
