One of the seasons most classic meals, this turkey dish is a guaranteed crowd pleaser.

Rolled and Deboned Turkey with Pork Sausage, Sage and Quinoa Stuffing

1 Kilogram Turkey, deboned

1 Tablespoon Olive Oil

Pinch of Sea Salt

Freshly Ground Pepper

Cooking Twine

For the Stuffing

3 Pork Sausages, skins removed

1.5 Cups Cooked Quinoa

6 Large Sage Leaves, finely chopped

½ Onion, finely diced

½ Apple, grated

Pinch of Sea Salt

Freshly Ground Pepper


Pre-heat the oven to 180c.  Place the quinoa, sausage meat, sage leaves, onion and grated apple into a large bowl.  Season with sea salt and freshly ground pepper, and mix together until well combined.

Lay the deboned turkey out flat, skin side down.  Place the stuffing mixture into the centre of the turkey and then roll together.

Cut off approximately 1 metre of twine and starting from one end, tie the turkey together.  Place the rolled turkey into a roasting pan and drizzle with olive oil. Massage the oil into the skin and then season.

Roast for approximately 1 hour, or until cooked through.

Serves 6-8
