Christmas Spiced Granola
1 Cup Buckwheat
1 Cup Almonds, roughly chopped
1 Cup Sunflower Seeds
½ Cup Pumpkin Seeds
½ Cup Linseeds
1 Tablespoon Ground Nutmeg
2 Tablespoons Ground Cinnamon
¼ Cup Coconut Oil
Pre-heat the oven to 180c. Add the buckwheat, almonds, sunflower seeds, pumpkin seeds and linseeds into a large mixing bowl.
Gently melt the coconut oil in a pan over a low heat. Pour the coconut oil over the granola mix, add in the nutmeg and cinnamon and mix well to combine.
Spread the mixture on a non-stick baking sheet (preferably lined with baking paper for easier clean-up), and bake in oven for about 25 minutes until golden brown - take the tray out every 5-10 min to mix the granola quickly and re-spread so the edges don't get burnt.
Serve with your favourite nut milk.
Will make enough for approximately 6 servings.
