Delicious Fish: Three ways with your fishy favorite

Stuck for inspiration for your week-night dinners? Check out these three delicious flavor combos to give your usual fish fry-up a quick and tasty makeover. Any white fish works well for this recipe but as always, buy local and seasonal for the freshest produce that’s closer to source. Ask your fishmonger for their favorite recommendations.


1kg white fish fillets

Olive oil for the pan


Black olive tapenade & lemon juice


Chilli flakes, lemon juice and parsley


Salt, pepper, finely chopped garlic and lemon juice


Heat oil in a large frying pan, add fish in batches (making sure not to overcrowd the pan) with your choice of flavourings, turn after a few minutes, when fish begins to look opaque, fry on the other side for a few more minutes, remove from the heat and serve with salt, pepper and lemon juice to taste.

Enjoy with cauli cous cous or warm broccoli and kale salad.
