The sugars in this cake come from dried fruit, balanced in part by the fibre content of the whole fruit. Try and select dried fruits that are fruit only don’t have any extra added sugars. This should still be considered a treat food for those who are aiming to reduce sugars and carbs overall.
700g Dried Mixed Fruit
100g Coconut Flour
100g Almond Meal
1.5 Tsp Cinnamon
1/4 of a Tsp Nutmeg, freshly ground
2 Tsp Vanilla Extract
3 Tbsp Olive Oil
Zest and Juice from 2 Oranges
100g Mixed Nuts to garnish, Walnuts, Brazil Nuts, Pecan, Hazelnuts
50g Dried Cranberries to garnish
20g Goji Berries to garnish
Pre-heat oven to 180°C.
Line the bottom and sides of a cake tin with baking paper.
In a large mixing bowl combine the dried fruit, cinnamon, nutmeg, vanilla, walnuts and orange zest and juice. In a separate bowl whisk the eggs and add to the dry mix along with the olive oil, stirring well to combine.
Fold through the Coconut Flour and Almond Meal, and mix well. Pour the cake mixture into the cake tin, and bake for approximately 1 hour. Test with a skewer to make sure it is cooked through, set aside to cool.
Turn the cake out onto a plate, and garnish with the extra dried nuts, cranberries and goji berries.
